Chicken and pine nuts with couscous
SERVES 1 W F B H M S
1–2 saffron strands
¼ cup couscous
2 teaspoons golden raisins
½ cup boiling hot chicken or vegetable stock
1 chicken breast fillet, about 4 ounces, cut into 8 strips
¼ cup corn kernels
1 teaspoon pine nuts
10 cherry tomatoes, cut into quarters
2 scallions, chopped
fresh cilantro leaves, to garnish
Dressing
1 teaspoon finely chopped fresh cilantro leaves
juice of ½ lemon
1 teaspoon olive oil
Method
Put the saffron, couscous, and golden raisins in a heatproof bowl and pour over the hot stock. Stir once and let stand for 15 minutes.
Meanwhile, beat together the dressing ingredients.
Heat a nonstick skillet over high heat, then brown the chicken strips on all sides for about 4 minutes. Reduce the heat to medium, add the corn kernels and pine nuts, and cook for another 2 minutes, stirring once or twice. Remove the chicken from the skillet and set aside.
Fluff up the couscous with a fork and add to the skillet with the tomatoes, dressing, and scallions. Heat for 1 minute, or until warmed through, stirring gently.
Spoon onto a serving plate, then top with the chicken strips and garnish with cilantro leaves.
